CAF 

The Andalusian Flamenco Centre is an arm of the Andalusian government's Culture Department based in Jeréz de la Frontera and dedicated to the teaching of and research into flamenco culture. It could be just me, but I find this Spanish-only site distinctly odd, unfocused. It contains a fine online magazine dedicated to academic aspects of flamenco and some valuable archive material, but the "Didáctica del flamenco" reads like the lesson plans of a not very inspired and extremely pedantic secondary school teacher, and its audio samples poorly recorded and not all that well played.

Houses, Monuments and Plaques 

Just that, photos of flamenco performers' houses and monuments and plaques to them. No addresses or directions given, so a flamenco fan could have a fun weekend trying to find them all.

La Taberna Flamenca 

Restaurant with tablao, flamenco show, perhaps less impressive but far cheaper than anything equivalent in Madrid or Seville.

Parilla de Jerez 

Something of an aristocrat among Jerez flamenco artists, and the "Biography" section of these Spanish-only webpages tells you more about his forebears than himself. Click "Oir temas" for the mp3s.
