La Tomatina 

La Tomatina is only part of Buñol's fiestas patronales, but undoubtedly the most famous part. In fact, the Tomatina has been thoroughly frowned on by officialdom for most of its existence (since the forties), and authorities have repeatedly tried to repress it: if it is now municipally sanctioned, it is only because they have no choice. The link goes to the official Tomatina page of Buñol's municipal website, which maintains that the event takes place on the last Wednesday in August, but I know it has sometimes been held on the fourth Wednesday in August: they do not always coincide, so check.

Ayuntamiento de Buñol 

Buñol is an agreeable enough little place about 40 km inland from the city of Valencia, of serious interest to visitors only for its fiestas, which include the famous Tomatina, a tremendously messy mass food fight. The link goes to Buñol's Spanish-only municipal website.
