Arzak 

Though his eponymous flagship Michelin 3-star restaurant in San Sebastian is now presided by his daughter Elena, Juan Mari Arzak is the undisputed patriarch of Spanish gastronomy, since almost single-handedly bringing about the fusion of nouvelle cuisine and traditional Basque cooking. Those who cannot be bothered waiting a couple of years to get a table at El Bulli or who would rather do without its more extravegant taste-bending experiments might prefer Arzak, though don't expect conservatism - Arzak invented culinary laboratory work before anyone had heard of Molecular Gastronomy.
