In the Old Castilian province of Soria, El Burgo de Osma is as sweet a little Mediaeval walled town as you could find, with a gorgeous Romanesque cathedral, a great ruined castle overlooking the town, a beautiful riverside promenade, and any number of places of interest in the surrounding area, including the lovely if overvisited Cañon del Rio Lobo. This municipal website does not have a great deal of information in English, but at least it's a start.
