Txacolí is a strong white wine (red and rosé are also made, but the traditional txacolí is white) and something of a national drink in the Basque Country. It has become much more sophisticated in recent decades (it used to be postitively rough at times) and should be adopted enthusiastically by any wine-loving visitor to the Basque Country. There are two denominaciones de origen, one each for the provinces of Vizcaya and Guipúzcoa - the full name of the Biscay DO is "Chacolí de Bizkaia - Bizkaiko Txakolina."
